                           J.J. Healy (South East Branch Chairman)
 

JJ attended the Galway R. T .C. in 1985 and 1986 where he obtained his 706-1 and 706-2 qualifications. Following this he worked as a Commis Chef in Jury's Hotel Limerick, the Aherlow House Hotel in Tipperary, Coffers Restaurant Dublin, the Great Southern Hotel in Galway and Shannon Knights in Shannon Town.

JJ finally moved to Durty Nelly's in Bunratty, Co Clare, as a Chef de Partie. After 18 months he was promoted to Pastry chef and stayed for another year in this position.

From Bunratty, JJ moved to Carrick-on-Suir where he took up the position of Head Chef in the Carraig Hotel.  JJ remained here for 9 years and he brought the reputation of the Hotels food outlets to new heights.

During this time he also taught  for one year as a part time lecturer in the local Vocational school as well as one year in the Waterford Institute of Technology where he taught the course in professional cookery for 1 st.  and 2nd. year students.

In September 1999  JJ went to work in Shanghai, China, for Rob Young at The Dublin Exchange and 0' Malleys Bar and Restaurant. This, he says, was the most amazing period in his carrier. To be so privileged as to be able to experience such a vast range of cultures, different foods and cooking styles as part of your profession is just fantastic.

However, JJ had to return home sometime and so in March 2000 he came back to Ireland full of new ideas. He spent a summer season in Carroll's Hotel Knocktopher, Co Kilkenny and then moved to Hearn's Hotel in Clonmel.

JJ started in this property as the head chef and being not satisfied with only running the kitchens, when the opportunity arose, he took over as the General Manager.

He fulfilled this role very successfully for 2 years and after this time decided to step back a little and enjoy his young family.

Presently JJ is the Bar and Restaurant Manager for Clonmel Greyhound Stadium.

JJ is a multi medal winner at national and intemational competitions and he has served on numerous judging panels both at home and abroad.  JJ is one of the founder members of the SouthEastern Branch of the Panel of Chefs of Ireland Ltd. and he has held the positions of Vice Chairman. and N.E.C. Officer.
