He then spent some time working in Bray as Chef de Partie. Myles moved back home to work as Head Chef in Sinnotts of Ashford. This was a very interesting time in his career as during his employment there the owners changed three times. He then moved some distance down the road fifty metres, to become Executive Chef Manager of Chester Beatty's Restaurant where he stayed for 12 years. Following this Myles moved to Lawless Hotel in Aughrim and he worked there for nearly three years as Head Chef. Myles is currently employed by the Compass / Eurest Group as Group Executive Chef. He is a member of the Panel of
Ireland for 10 years and has held the positions of Secretary and Membership
Officer in the Leinster Branch before accepting the National Secretary's
position.
