Paul is working in the industry for over 20 years, most recently as Chef Instructor in the Army Catering College in Dublin. He has competed in many national and international catering events over the years. The most prestigious, says Paul, was the Culinary Olympics in Erfurt, Germany where he was awarded a Bronze medal. Paul is a very active member of the Panel of Chefs of Ireland Ltd. and he is responsible for initiating the very high calibre Irish Chef of the Year Competition held every two years in Dublin. He was also on the organising committee of the national culinary competitions and the manager of the live theatre of Chef Ireland 2005. Paul has many interests in food and he enjoys the modem trends that have evolved in the past few years in Irish cooking.
